Hello, and welcome to My Kitchen and I. Every year I choose a cuisine to explore. This year, it's the year of the Snake! And I'll be continuing to cook mostly Asian foods, particularly Chinese dishes. Have I finally found the best cuisine in the world? Come explore and cook with me and let's find out. Shelby's Rainy Day Potato Chowder

Hot sauce is the secret to the
zing in this potato chowder.
Today I came home from work to find a delicious lunch of soup and cheese sandwiches awaiting me, created by my daughter, who is visiting for Christmas break. It was a gray and rainy day, but I confess the soup certainly brightened things up! That's the power of good soup. It just does something good for the soul.

You'll enjoy this dish. It's so easy to prepare and healthy and delicious to boot. A definite keeper!





Rainy Day Chowder

In a medium-sized sauce pot, melt

2 T butter

and saute

1 cup each frozen peas, corn
1/2 cup frozen carrots
1/4 cup chopped onion

Stir together

4 tsp cornstarch
4 cups skim milk

To the saucepot add the milk mixture and

1/4 cup thinly sliced green onions
2 tsp hot sauce
1 can evap milk
2 cups cooked, cubed potatoes
salt and pepper to taste

Bring the soup to a boil, reduce heat to low and simmer for 15 minutes, stirring constantly. Let soup sit for 10 minutes to  thicken and cool while you prepare your favorite cheese sandwiches and serve it with some Christmas carols for an extra Merry lunch.

Served with lovely
two-cheese sandwiches

  1. Don't get me wrong, I love soups and that soup very much, but the dark toasted cheese sandwich in the background made me drool all over my keyboard! :) yummy!

  2. I am a big fan of cheese sandwiches myself, Gregoire. Especially when someone else made me the sandwich! :D
