You'll enjoy this dish. It's so easy to prepare and healthy and delicious to boot. A definite keeper!
Rainy Day Chowder

In a medium-sized sauce pot, melt
2 T butter
and saute
1 cup each frozen peas, corn
1/2 cup frozen carrots
1/4 cup chopped onion
Stir together
4 tsp cornstarch
4 cups skim milkTo the saucepot add the milk mixture and
1/4 cup thinly sliced green onions
2 tsp hot sauce
1 can evap milk
2 cups cooked, cubed potatoes
salt and pepper to taste
Bring the soup to a boil, reduce heat to low and simmer for 15 minutes, stirring constantly. Let soup sit for 10 minutes to thicken and cool while you prepare your favorite cheese sandwiches and serve it with some Christmas carols for an extra Merry lunch.

Don't get me wrong, I love soups and that soup very much, but the dark toasted cheese sandwich in the background made me drool all over my keyboard! :) yummy!
